One of my favorite things about my new city…True Food Kitchen.
You may have heard about it before as it’s become a hot spot out on the west coast with celebrities and foodies alike and I am so thankful they chose Colorado for their newest location.
True Food Kitchen is Dr. Andrew Weil’s restaurant. He’s a well known holistic health guru that promotes natural living and healing through food. He’s also founder, director and professor of the Arizona Center for Integrative Medicine at the University of Arizona.
I was so excited to give this place a try and it did not disappoint. Their whole philosophy is to serve delicious food, that also happens to be healthy. Rather than healthy food at all costs.
The menu is built around an anti-inflammatory diet (much like Drew Parisi’s meal plans for The PBP) and provides a wide variety of seasonal options for all tastes and appetites. Along with a full juice bar with freshly pressed ingredients.
The ambiance is just right. Cozy enough for a date night, but hip and lively enough for a dinner out with friends.
Immediately upon being seated, the vegetable platter next to us caught our eye. Fresh, beautiful, delicious, satisfying.
I ordered the Butternut Squash Pizza topped carmelized onion, walnuts, smoked mozzarella and arugula. To die for. The balance of sweet from the squash was met perfectly by the smoky cheese, walnuts and peppery arugula.
My date ordered the Street Tacos with steak and was pleasantly surprised by the size. Often “healthy food” restaurants serve too small of portions for my guy but that was not the case at True Food Kitchen.
I can’t wait to go back and try more from the menu. Next on my list: the Umami Bison Burger.
